My birthday is this Sunday and according to Filipino tradition, I’m supposed to eat pancit for good luck — the noodles are supposed to represent “long life.”
So I’ll try it out this weekend. My grandmother bought me all the ingredients, which my mom Fedexed to me in a 30-lb. package. It’ll never turn out as well as Tito Maro or Nanay’s, but we’ll see.
Recipe:
1 onion, sliced
3 cloves garlic, crushed
1 boneless chicken breast, sliced thinly
2 tbs soy sauce
2 c. chicken broth
1 c. cabbage, shredded
1 c. green beans, julienned
2 carrots, julienned
1 package pancit CANTON noodles (the YELLOW one, not the clear one)
4 scallions, sliced
1 lemon, cut into wedges
1 tsp patis (fish sauce)
Saute garlic and onions in vegetable oil until translucent. Add chicken and cook until browned. Add soy sauce and chicken broth, stir and bring to a boil. Add in cabbage, green beans and carrots and cook until tender (about 5-8 minutes). Add the noodles (but don’t break them!). Cook for about 10 minutes until the noodles are done. Remove from heat and add patis, black pepper and salt to taste. Garnish with scallions and lemon wedges.
OH CRAP! I forgot to mention that this is really good with Chinese sausage or sliced boiled eggs on top. Actually, I recommend both…
